Ingredients
  

  • 2 cups pancake mix
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions
 

  • In a large mixing bowl, combine 2 cups of pancake mix, 1 cup of milk, 2 large eggs, 1 teaspoon of vanilla extract, 1/4 cup of granulated sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of baking powder. Whisk until smooth.
  • Heat about 2 inches of vegetable oil in a large, deep skillet or saucepan over medium heat to 350°F (175°C).
  • Pour the batter into a squeeze bottle or piping bag. Squeeze the batter into the hot oil in a spiral or crisscross pattern. Fry for 1-2 minutes on each side or until golden brown and crispy.
  • Remove the funnel cakes from the oil using a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
