  • 1 cup pancake mix
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter or oil
  • 1 tablespoon sugar optional, for sweetness
  • 1 teaspoon vanilla extract optional, for extra flavor
  • A pinch of salt

Instructions
 

  • In a mixing bowl, combine 1 cup of pancake mix with 1 cup of milk. Whisk until smooth and free of lumps.
  • Add 2 large eggs, 2 tablespoons of melted butter (or oil), and a pinch of salt. Optionally, mix in 1 tablespoon of sugar and 1 teaspoon of vanilla extract.
  • Whisk everything together until the batter is well combined.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to set, then flip and cook for another 1-2 minutes until golden brown.
  • Repeat with the remaining batter.
