  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract optional
  • Cooking spray or additional butter for the skillet

Instructions
 

  • Preheat the skillet or griddle over medium heat and lightly grease it.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the egg, milk, melted butter, and vanilla extract if using.
  • Combine the wet and dry ingredients, stirring until just mixed.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form and edges look set, then flip and cook until golden brown.
  • Serve hot with your favorite toppings.
