Ingredients
  

  • 2 1/4 teaspoons active dry yeast
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 3/4 cups milk preferably warm
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract optional
  • Powdered sugar for serving, optional

Instructions
 

Activate the Yeast:

  • In a small bowl, dissolve the yeast in 1/2 cup of warm milk. Let sit for 5-10 minutes until frothy.

Prepare the Batter:

  • In a large mixing bowl, combine flour, sugar, and salt.
  • Make a well in the center and add the remaining milk, melted butter, and yeast mixture. Stir to combine.
  • Beat in the eggs one at a time until smooth. Add vanilla extract if using.
  • Cover with plastic wrap and let rise in a warm place for 1-2 hours or until doubled in size.

Cook the Waffles:

  • Preheat waffle iron according to manufacturer’s instructions.
  • Lightly grease the waffle iron.
  • Pour batter onto hot waffle iron and cook for 3-5 minutes, until golden brown and crispy.

Serve and Enjoy:

  • Serve hot, dusted with powdered sugar or topped with your favorite toppings.
