Ingredients
  

Marinade:

  • 3 tablespoons chipotles in adobo about 1-2 peppers
  • 3 tablespoons water
  • 1 tablespoon lime juice
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon ancho chile powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano

Steak:

  • 2 pounds of flank steak skirt steak, or top-round steak

Instructions
 

  • Make the Marinade: In a food processor or blender, combine garlic, chipotles in adobo sauce, ancho chile powder, olive oil, cumin, and dried oregano. Blend until smooth.
  • Marinate the Steak: Coat the steak with the marinade and let it sit in the refrigerator for at least 2 hours or overnight for best results.
  • Prepare the Steak: Bring the steak to room temperature before cooking.
  • Cook the Steak: Heat a cast-iron skillet over high heat. Sear the steak for 4-5 minutes on each side for medium-rare, or until it reaches an internal temperature of 130-135°F.
  • Rest the Steak: Let the steak rest for 5-10 minutes before slicing to retain juices.
