  • Crab Meat: 1 pound fresh or canned, preferably lump or claw meat
  • Breadcrumbs: 1 cup
  • Eggs: 2 large beaten
  • Mayonnaise: ¼ cup
  • Dijon Mustard: 1 tablespoon
  • Old Bay Seasoning: 1 teaspoon
  • Parsley: 2 tablespoons chopped
  • Green Onion: 2 tablespoons chopped
  • Garlic: 2 cloves minced
  • Lemon Juice: 1 tablespoon
  • Salt and Pepper: To taste
  • Olive Oil: For frying or brushing for baking

Prepare the Crab Meat:

  • Drain and flake canned crab meat or use fresh, ensuring it's properly cooked and free of shells.

Mix the Ingredients:

  • Combine crab meat, breadcrumbs, beaten eggs, mayonnaise, Dijon mustard, Old Bay seasoning, parsley, green onion, minced garlic, and lemon juice in a mixing bowl.
  • Season with salt and pepper to taste.

Shape the Crab Balls:

  • Form the mixture into 1-1.5 inch balls and place them on a baking sheet lined with parchment paper.

Cook the Crab Balls:

  • Frying: Heat olive oil in a skillet over medium heat. Fry crab balls in batches, cooking for 2-3 minutes per side until golden brown. Drain on paper towels.
  • Baking: Preheat the oven to 375°F (190°C). Brush or spray crab balls with olive oil and bake for 15-20 minutes until golden brown.
