- 500 grams of all-purpose flour
- 10 grams of salt
- 50 grams of sugar
- 10 grams of instant yeast
- 250 milliliters of cold water
- 250 milliliters of cold milk
- 250 grams of unsalted butter
- 1 beaten egg for egg wash
Prepare the Dough:
Activate the yeast in warm milk.
Mix 250 grams of bread flour, 250 grams of all-purpose flour, 7 grams of salt, and 90 grams of sugar in a bowl.
Add 200 ml of whole-fat milk, 1 1/2 eggs, 20 grams of butter, and 25 grams of yeast.
Knead until elastic and let rest for 15 minutes.
Incorporate the Butter:
Roll the dough into a rectangle and place a 260-gram butter slab on top.
Fold the dough over the butter, roll, and fold three times.
Chill the dough for 30 minutes to four hours or overnight.
Shape and Bake:
Shape the dough into triangles and roll into crescents.
Place on a tray and let proof at room temperature for an hour, then chill for another hour.
Brush with egg wash and bake at 428°F (220°C) for 12 minutes or until golden brown.
