- Canned Salmon: 2 cans 6 oz each
- Crushed Crackers: 25 Ritz crackers or equivalent
- Eggs: 2 large
- Onions: 1 small finely chopped
- Yellow Cornmeal: 1/4 cup
- Mayonnaise: 1/4 cup or Greek yogurt for a healthier option
- Chili Powder: 1/2 teaspoon
- Salt and Pepper: to taste
- Olive Oil: for frying
Optional Add-ins
- Fresh Dill: 1 tablespoon chopped
- Minced Garlic: 1 clove
- Bell Peppers or Zucchini: 1/2 cup finely chopped
Prepare the Ingredients:
Drain the canned salmon and remove any skin or bones if necessary. Flake the salmon into a large mixing bowl.
Crush the crackers into fine crumbs and add them to the bowl.
Finely chop the onion and add it to the bowl.
Mix the Ingredients:
In a separate bowl, whisk together the eggs, mayonnaise (or Greek yogurt), chili powder, salt, and pepper.
Add this mixture to the salmon and cracker crumbs. Mix everything until well combined. The mixture should hold together well. If it feels too wet, add a bit more cracker crumbs.
Form the Patties:
Shape the mixture into patties about 4 inches in diameter and 1 inch thick. You should get around 8 to 12 patties, depending on the size.
Place the patties on a plate and refrigerate for 15-30 minutes. This helps them firm up and hold their shape while frying.
Cook the Patties:
Heat a thin layer of olive oil in a skillet over medium heat.
Fry the patties in batches, cooking for 3-4 minutes per side, or until they are golden brown and crispy.
Remove the patties and drain them on paper towels.
