For the Crust:
- 1 and 1/2 cups 180 grams Graham cracker crumbs or Keebler cookie crumbs
- 1/3 cup 65 grams Granulated sugar
- 5 tablespoons 70 grams Unsalted butter, melted
For the Filling:
- 32 ounces Cream cheese softened
- 1 cup 230 grams Sour cream
- 1 cup 200 grams Granulated sugar
- 2 teaspoons Vanilla extract
- 4 large Eggs
- Optional: Lemon zest for added flavor
Prepare the Crust:
Crush the Keebler cookies into fine crumbs using a food processor.
Mix the crumbs with melted butter and granulated sugar until well combined.
Press the mixture into the bottom of a springform pan. Chill for 1 hour to set.
Prepare the Filling:
Preheat the oven to 325°F (163°C).
In a mixing bowl, blend softened cream cheese until smooth.
Gradually mix in granulated sugar, eggs, and vanilla extract. Add sour cream and mix gently until combined. Avoid overmixing.
Pour the filling over the chilled cookie crust.
Bake:
Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water to create a water bath.
Bake for 50-60 minutes until the center of the cheesecake wobbles slightly.
Turn off the oven and let the cheesecake cool with the oven door slightly ajar.
Chill:
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
Decorate as desired with toppings like chocolate syrup, caramel sauce, or fresh berries before serving.
