Ingredients
  

For the Crust:

  • 1 and 1/2 cups 180 grams Graham cracker crumbs or Keebler cookie crumbs
  • 1/3 cup 65 grams Granulated sugar
  • 5 tablespoons 70 grams Unsalted butter, melted

For the Filling:

  • 32 ounces Cream cheese softened
  • 1 cup 230 grams Sour cream
  • 1 cup 200 grams Granulated sugar
  • 2 teaspoons Vanilla extract
  • 4 large Eggs
  • Optional: Lemon zest for added flavor

Instructions
 

Prepare the Crust:

  • Crush the Keebler cookies into fine crumbs using a food processor.
  • Mix the crumbs with melted butter and granulated sugar until well combined.
  • Press the mixture into the bottom of a springform pan. Chill for 1 hour to set.

Prepare the Filling:

  • Preheat the oven to 325°F (163°C).
  • In a mixing bowl, blend softened cream cheese until smooth.
  • Gradually mix in granulated sugar, eggs, and vanilla extract. Add sour cream and mix gently until combined. Avoid overmixing.
  • Pour the filling over the chilled cookie crust.

Bake:

  • Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water to create a water bath.
  • Bake for 50-60 minutes until the center of the cheesecake wobbles slightly.
  • Turn off the oven and let the cheesecake cool with the oven door slightly ajar.

Chill:

  • Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
  • Decorate as desired with toppings like chocolate syrup, caramel sauce, or fresh berries before serving.
