- 1 cup Kodiak Cakes Protein Pancake Mix
- 3 ripe bananas
- 1 cup milk any type, such as almond, cow's, or oat milk
- 1 egg
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon optional
- 1 teaspoon vanilla extract optional
- 1/2 cup mini chocolate chips
Preheat the oven to 400°F (200°C) and grease a 12-cup muffin tin.
In a large bowl, combine the Kodiak Cakes Protein Pancake Mix.
In a separate bowl, mash the ripe bananas and mix in the milk, egg, maple syrup, cinnamon, and vanilla.
Pour the wet ingredients into the dry pancake mix and stir until just combined.
Fold in the mini chocolate chips.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Sprinkle additional chocolate chips on top.
Bake for 22 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool for 5 minutes before removing from the tin.
