- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk dairy or non-dairy
- 1 large egg
- 2 tablespoons melted butter or vegetable oil
- 1/2 teaspoon vanilla extract optional
Prepare the Batter: In a large bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and 1/4 teaspoon of salt. In another bowl, mix 1 cup of milk, 1 large egg, 2 tablespoons of melted butter or oil, and 1/2 teaspoon of vanilla extract. Combine the wet and dry ingredients and stir until just mixed. The batter should be slightly lumpy.
Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil if needed.
Cook the Pancakes: For mini pancakes, use a teaspoon or small cookie scoop to drop small amounts of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 1-2 minutes. Flip and cook for an additional 30 seconds to 1 minute, or until golden brown.
