Ingredients
  

  • 1 1/2 cups oat flour
  • 2 tablespoons sugar or honey
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups milk dairy or non-dairy
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract optional

Instructions
 

Prepare the Dry Ingredients:

  • In a large bowl, whisk together 1 1/2 cups oat flour, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/4 teaspoon salt.

Mix the Wet Ingredients:

  • In a separate bowl, combine 1 1/2 cups milk, 1 large egg, 2 tablespoons melted butter or oil, and 1 teaspoon vanilla extract if using. Mix until well combined.

Combine and Stir:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy but free of large dry spots.

Heat the Pan:

  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil if necessary.

Cook the Pancakes:

  • For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, or until golden brown.

Serve:

  • Remove the pancakes from the skillet and keep warm. Serve with your favorite toppings.
