- 1 onion diced
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes
- 1 cup frozen corn
- 1 cup frozen peas
- 1 cup beef broth
- 2 tablespoons white sugar
- 1 teaspoon garlic salt
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon freshly cracked black pepper
- 2 tablespoons cooking oil for browning the beef
- 1 tablespoon Worcestershire sauce optional, for slow cooker method
- 1 tablespoon soy sauce optional, for slow cooker method
Stovetop Method:
Heat 2 tablespoons of cooking oil in a large pot or Dutch oven over medium heat.
Add 1 pound of ground beef and cook until browned, breaking it up with a spoon.
Add 1 diced onion and 2 cloves of minced garlic to the pot. Sauté until the onion is translucent.
Stir in 1 can of diced tomatoes, 1 cup each of frozen corn and peas, and 1 cup of beef broth.
Add 2 tablespoons of white sugar, 1 teaspoon of garlic salt, 1 teaspoon of dried rosemary, 1 teaspoon of dried thyme, and 1/2 teaspoon of freshly cracked black pepper.
Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally, until the stew thickens.
Slow Cooker Method:
Brown 1 pound of ground beef in a skillet and drain excess fat. Transfer the beef to a slow cooker.
Add 1 diced onion, 2 cloves of minced garlic, 1 can of diced tomatoes, 1 cup each of frozen corn and peas, and 1 cup of beef broth.
Stir in 2 tablespoons of white sugar, 1 teaspoon of garlic salt, 1 teaspoon of dried rosemary, 1 teaspoon of dried thyme, 1/2 teaspoon of freshly cracked black pepper.
For added depth of flavor, stir in 1 tablespoon each of Worcestershire sauce and soy sauce (optional).
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
