For the Cheesecake:
- 8 oz cream cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup strawberry puree
- 1 tsp vanilla extract
- 1 packet of strawberry Jell-O
For the Crust:
- 24 Golden Oreo cookies
- 4 tablespoons melted salted butter
For the Crunch Topping:
- 1 cup crushed cookies or graham crackers
- 1/2 cup unsalted butter can substitute with vegan butter
- Fresh strawberries for garnish
Preheat your oven and prepare a 9-inch springform pan.
Crush 24 Golden Oreo cookies and mix with 4 tablespoons melted salted butter. Press into the pan to form the crust.
Beat 24 oz room temperature cream cheese with 2 cups powdered sugar, 2 teaspoons lemon juice, and 2 teaspoons vanilla extract until smooth. Add 1 ½ cups heavy whipping cream and mix until creamy. Stir in 1 cup fresh strawberries.
Pour the filling over the crust and bake for about 60 minutes, or until set.
Cool the cheesecake for 4 hours and 30 minutes.
For the crunch topping, mix freeze-dried strawberries, crushed Golden Oreos, and melted butter.
